Pin It Slow Cooker Chicken Tortilla Soup

Love my slow cooker!  As long as you can get your act together the night before (which Sundays are perfect for), then Monday night dinner can be so easy!

I ended up leaving out the cumin and serrano pepper, just based on personal flavor/heat preference. I also substituted in a orange and yellow bell pepper instead of a green, and the soup was delicious. 

All I had to do was throw everything into the crock pot and cook on low for 8 hours. I topped it with grated cheese, lime wedges and tortilla chips. Delicious Monday night dinner with minimal effort. Done.
